The ingredients needed to make Chunky vegetable omelette:
  1. Get 4 free range Eggs
  2. Take 4 Tablespoons lactose free milk
  3. Prepare 1 small head of Broccoli (cut into chunks)
  4. Take 125 g Cherry or grape tomatoes (halved)
  5. Make ready 1/2 red Capsicum (cut into strips)
  6. Take 60 g Goats Feta (crumbled)
  7. Prepare Olive oil spray
  8. Get Pinch Murray river sea salt
  9. Take 2 pinched Cracked pepper
Steps to make Chunky vegetable omelette:
  1. Spray and preheat a non-stick fry pan over medium high heat.
  2. In a small bowl, mix eggs, milk, salt & pepper.
  3. Pour eggs into pan, once cooked, reduce heat to low.
  4. Cut all vegetables & place on top of Omelette, sprinkle with Feta over the top.
  5. Cover & cook, until eggs are cooked through. Or alternatively you can place fry pan (make sure it's oven proof) in 180° celcius oven uncovered to cook through, this is my preferred method.
