  2. Prepare 1 small white onion, diced

  5. Get Olive oil, extra virgin

  1. Prepare all ingredients. Beat the eggs in a bowl and set aside.
  2. Heat pan to medium. Drizzle with olive oil.
  3. When the oil is hot enough, put in the garlic. Saute for 2 minutes.
  4. Add onions and saute for 2 more minutes or until transparent.
  5. Add the beaten eggs. Do not stir. Wait for about half a minute for the sides to solidify. Add salt and pepper to taste.

  7. Keep on folding until the eggs look cooked enough. Not too much or the eggs might dry out!
  8. Serve and enjoy!
