I didn't use the low-fat cream cheese because I've never found it to bake/cook well and instead of returning the squash to a baking dish I scooped it.

  1. Preheat oven to 400
  2. Cut squash equator side up and remove seeds and membranes
  3. Face up on baking sheet, brush with olive oil and sprinkle with salt and pepper. Bake for 60 min
  4. Halfway through, saute garlic and chopped onion until garlic is slightly brown and onion translucent.
  5. Add broth and bring to a boil over med.
  6. Add cinnamon

  8. Put in a blender or use a hand blender. Blend to the consistency you prefer. Add lemon juice, cream and enjoy.wbenknnjdu

Very tasty way to do acorn squash which my kids and I just love!
