Steps to make Fish a la Spetsiota:
  1. Clean the fish, wash and wipe it dry.
  2. Season with salt and pepper and place it in a baking tray.
  3. Sprinkle with the lemon juice and with a little of the wine.
  4. Season with the thyme or the oregano. Sprinkle with half the olive oil and place it in the fridge for half an hour to marinate.
  5. Place some olive oil in a pot and sauté the onion and the garlic. Add the tomatoes, grated, the bay leaves and a little sugar. Boil for 5 minutes.
  6. Pour the sauce in the baking tray and place the fish on top. Mix the rest of the olive oil, the tomato paste and the rest of the wine and pour it over the fish.
  7. Season with salt and pepper, sprinkle with a little thyme or oregano as well as a little parsley and place the tomato slices on top of the fish.
  8. Add the potatoes that you have already peeled and cut.
  9. Cover with aluminum foil and bake at 200°C for about 50 minutes. Towards the end of the cooking time remove the aluminum foil and bake for an additional 5 minutes.
