  10. Make ready 1 tablespoon each cornflour and milk powder
  11. Make ready 2 tsp baking powder
  12. Get 1 tsp baking soda
  13. Take 1/2 tsp each ginger and cinnamon powder
  14. Take 1/4 tsp nutmeg powder and orange peel powder
  15. Make ready 1/2 tsp each cardamom and clove powder
Steps to make Christmas Fruitcake Cups:
  1. First soak the fruits and nut in orange juice and caramel syrup, cover and keep in the refrigerator for 3 to 4 days. Then on baking day, take out and bring to room temperature.
  2. Preheat oven to 170°c for 10 minutes. Arrange cupcake paper cups in tray.
  3. Mix vinegar in milk and keep aside for 5 minutes. When the milk curdles, buttermilk is ready. Add all the spices in the soaked fruit and nuts and mix well.
  4. Sieve all the dry ingredients and keep aside. Cream butter and sugar in a bowl.
  5. Then add the dry ingredients and buttermilk alternately and mix by cut and fold method. Then gently fold in the fruits and put equal portions in each cupcake liner cup.
  6. Tap the tray gently 2 to 3 times and place in oven to bake for 25 to 30 minutes on 170°C till a toothpick inserted comes out clean.
  7. Take out, cool completely and garnish as per choice with sugar sprinkles or buttercream. Enjoy.
