  6. Take 1.5 cups self-raising flour
  7. Take Half teaspoon grated nutmeg
  8. Make ready 1 teaspoon vanilla essence

Combine dry ingredients and gently stir into banana mixture. Tip in the blueberries and give it just one more stir. Beat milk, oil, banana and egg in large bowl with fork. Stir in remaining ingredients except blueberries just until flour is moistened.

Steps to make Blueberry and banana muffins:
  1. Heat oven to 175 degrees C. Oil muffin tin or line with patty cake paper cases.
  2. Mash bananas and wash blueberries
  3. Add oil, eggs and sugar to a mixing bowl and whisk until combined and mixture lightens (hand whisk is fine)
  4. Add remainder of ingredients and mix gently with a spatula or wooden spoon.
  5. Divide muffin batter evenly between patty cake papers.
  6. Sprinkle with granulated sugar if you prefer a crunchy top to the muffin
  7. Bake in the oven for approximately 20-25 mins. Muffins will be springy to the touch when done.
  8. Cool slightly then remove to a cooling rack.
  9. Enjoy! Makes 12-15 muffins.
