It's cozy, and wintery, and it is so dang good. Put the sausage slices, onions, and potatoes into a large bowl. Drizzle with olive oil and season with salt, pepper, paprika, and dried thyme. Toss together and pour on to the baking tray.

Steps to make Smoke sausage and Potatoes:
  1. Melt butter in a large dutch oven over medium heat
  2. Add sausage and stir occasionally. Cook for 10 minutes or until brown.
  3. Add scallion and continue to cook for 5 minutes.
  4. Add potatoes and remaining ingredients. Cover and let cook for 20-30 minutes or until potatoes are tender.
  5. Salt & Pepper to taste. Finish with parsley on top.

Drizzle with olive oil and season with salt, pepper, paprika, and dried thyme. Toss together and pour on to the baking tray. What potatoes are good in goulash or stew. As I mentioned above I usually use red skin potatoes in my goulash. And I've been doing to for quite some time(ok, for many years).
