  1. Take Meat and vegetables
  2. Take 1 small cucuzza
  3. Take 12 ounces beef smoked sausage
  4. Prepare 1 stalk celery julienne style
  5. Prepare 2 medium sized carrot julienne style
  6. Prepare 1/2 large green bell pepper
  7. Get 1 extra large onion
  8. Take 1 heaping tablespoon of minced garlic
  9. Prepare To taste salt
  10. Make ready 1/3 cup self rising flour
  11. Get 2 tablespoons peanut oil
  12. Take Sauce
  13. Take 2-1/2 cup beef broth
  14. Make ready 1 tablespoons Valentina hot sauce
  15. Make ready 1 tablespoon rice vinegar
  16. Make ready 1 tablespoon sugar
  17. Get 1 teaspoon salt
  18. Get 1/4 cup Heinz tomato ketchup
  19. Make ready 1 tablespoon peanut oil
  20. Prepare 1/2 teaspoon roasted sesame seed oil

However, it can be found in many Italian American home gardens, growing like wildfire along a fence. The cucuzza originated in Italy, and seeds are often still passed down through families. Cucuzza looks like a smooth, pale zucchini with an elegant curvature and can be up to three feet in length. We used to grow this kind of squash (cucuzza) in our back yard.

Steps to make Cucuzza and Sausage:
  1. Peel the cucuzza and remove any large seeds and dice. Remove the casing from the sausage. Julienne the carrots, bell pepper, the celery and sliver the onion.
  2. All this can be done ahead of time.
  3. Slice the sausage and fry in the oil. Mix the sauce ingredients and set aside.
  4. When the sausage is cooked and just crispy set aside. Add the vegetables and garlic to the deep pan, that you fried the sausage in. Coat all the vegetables with the oils.
  5. When the vegetables are tender, add the flour and sausage to the vegetables, and sauté for 8 minutes.
  6. Add the sauce ingredients and mix well stirring constantly until smooth and thick. If too thick add water or broth to the ingredients. Taste and add more of the flavors noticable that are not being taste, that you want.
  7. Serve I hope you enjoy!!!
