I use savoy cabbage, but regular green cabbage will do just fine. I made this Friday night and these are the best collard greens I've ever eaten. I served with a big skillet of cornbread. Collard greens are a headless forming cabbage, similar to kale.

Steps to make Smothered Cabbage and Collard Greens:
  1. Cut up the Bacon. Chop the bacon in half, then the halves in half. Then cut up your Onion and Garlic.
  2. Add Bacon, Onion, and Garlic to a pot with a 1/4 cup of oil. Cook until Onions are soft and the Bacon has some color.
  3. Add the cleaned Collard Greens to with the Bacon, Onion, Oil, and Garlic. Cook for 10mins.
  4. After 10mins, add the Cabbage. Season to taste with all your seasonings. As the greens become softer, taste to be sure its to your desire.

I served with a big skillet of cornbread. Collard greens are a headless forming cabbage, similar to kale. Their leaves are broad, paddle-shaped and grey green to deep green in color with contrasting succulent white ribs and veins.
