  6. Add the greens, salt and olive oil, cover with lid and bring to the boil.
  7. Once its boiling, add in the potatoes, garlic, and stock cube, lightly stir, cover with lid and cook for a further 15 minutes
  8. Add in the the cod and cook for a further 5 minutes.
  9. Check seasoning is to your taste.
  10. Remove from the heat, add in the mint, lightly stir and let it rest for 10-15 minutes.

Heat olive oil in a large pot over medium heat. Add garlic, and gently saute until light brown. Collard greens date back to prehistoric times, and are one of the oldest members of the cabbage family. Olive oil - Or use your favorite oil. Lemon - The lemon is essential in this recipe so Red pepper flakes - For a little optional heat, add a few pinches of red pepper flakes.
