Put in a large pot and bring to a boil. Drain the cauliflower and parsnips and put into a blender. too much parsnip for us, DH complained about parsnips and horseradish taste. Stir in cauliflower, parsnip, potato, broth, salt, pepper and bay leaf. Cover and bring to boil over high heat.

Instructions to make Cauliflower Parsnip & Bacon Soup:
  1. Heat a saucepan over medium heat. Add bacon, onion & garlic, thyme & cook, stirring for 5 minutes.
  2. Add the stock & water to the pan. Increase heat to high, bring to the boil, reduce heat & simmer on medium heat until parsnip is cooked & tender. Set aside for 10 minutes to cool slightly.
  3. With a handheld blender blitz until smooth. Add to bacon and onion mix, cook through for a further 2 minutes.
  4. Garnish with yoghurt & extra bacon.
  5. Note: for a variation I often blitz it all together, and garnish with a tablespoon of crispy bacon.
