  10. Make ready 1 teaspoon cajun seasoning
  11. Prepare 14.5 ounce can,red beans,drained
  12. Take 3 each scallions add at the end – cut bias /on an angle

Truly a must-have on your weekly rotation! Traditional Louisiana red beans and rice also uses Andouille sausage which we did not add, but you could if you wanted. There was plenty of flavor, and plenty of meat, with the smoked shanks. No tomatoes are in real red beans and rice.

Steps to make Red Beans and Rice:
  1. Melt the butter in a sauce pan over a medium heat, add the garlic and red bell peppers saute for 2 minutes (If you are using the sausage add with the garlic and peppers)
  2. Add the rice stir for 30 seconds add then add the remaining ingredients (add scallions at the end)
  3. Simmer lightly with a lid until the rice is tender and done about 20-30 minutes.
  4. Add more stock if needed…Do not burn:)
  5. Mix in the scallions to finish.

There was plenty of flavor, and plenty of meat, with the smoked shanks. No tomatoes are in real red beans and rice. I live in Louisiana and these were not even close to how they are served down south. They tasted OK, but I was disappointed in the results. Red beans & rice is a traditional Creole dish made with red beans, veggies, and, often, leftover pork bones.
