As you remove the pieces from the pan, lay them on a paper towel lined plate to drain.
  5. Serve immediately while still hot and crispy, sprinkled with a little salt. Plain table salt is just fine, though Maldon salt crystals taste particularly delicious.

Mac and cheese becomes fun finger food! This mac is cheesed to the max with Cheddar, Italian cheeses, and even pimento cheese spread; chilled Stir in the macaroni, and return to a boil. Just use cheddar cheese for fried mac and cheese. This is also when you would add bacon if you're using it. So instead of mac & cheese balls, they are more bites.
